Meet Head Chef… Almas

Our Head Chef, Almas, was born and raised in Dhaka, Bangladesh. Throughout his childhood Almas was always watching cooking shows which ignited his passion for cooking.

In 2008, Almas moved to Sydney and worked as sous chef at the Dolphin Hotel in Surry Hills and the Coopers Arms Hotel in Newtown before joining the team at popular Sydney venue, Bar Luca. In 2016, he joined the team at the Victoria Bar and Grill as Head Chef before making the big move to Yass in 2019 to bring his experience and passion to the kitchen at The Australian.

Experience Almas’ passion the next time you visit The Australian - his prawn linguine pasta is his favourite dish on the menu because of the fun he has when making it for you. To get the most flavour out of the garlic Almas brings it to the point of burning, then adds white wine to the pan just in time. This combination causes a spectacular flame show - which you might even be able to catch a glimpse of through the service window!
